Rice. It’s inexpensive and that’s great, but it can be dull without a little help. I usually add some spray butter, salt, and pepper, and that’s fine. I eat it; Justin usually doesn’t. But this rice is in another category entirely. It’s so good! I served it this week along with Indian Marinated Vegetable Kebabs and we both loved it.
Toasted Pecan & Raisin Rice
Yield: About 2 Servings
Ingredients:
- 2 cups cooked white rice
- 1/2 cup pecans, chopped
- 2 tablespoons raisins
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
- 1 teaspoon salt
Directions:
Place pecans in a pan and toast on medium heat till they are slightly browned. Be careful not to burn the nuts. When the nuts are done, add all remaining ingredients to the pan and mix well.
Any combination of nuts and dried fruit will work in this recipe.
