Strawberry Crispy Treats

Most everyone loves a Rice Krispy treat loaded with marshmallowy, buttery goodness.  They are super quick to make and require no baking which is a big plus with hot summer ahead.  I recently found this recipe which is similar, but takes on a whole different taste. Rather than typical crispy rice cereal, it uses vanilla flavored Chex cereal.  The addition of dried strawberries gives the bars a different flavor, too.

I got my strawberries at Trader Joe’s.  They are the same kind you find if you buy cereal at the grocery that has added strawberries.  They are “freeze dried” rather than the typical dry fruit.  They are much drier than using something like dried cranberries, though that might work too.  (Haven’t tried it)!

food 090This is what Trader Joe’s freeze dried strawberries look like.

Ingredients: 

  • 4 tablespoons butter
  • 10 oz bag mini marshmallows
  • 13.5 oz box Vanilla Chex cereal
  • 1.2 oz bag freeze-dried strawberries

Directions: 

  1. Spray a 9×13 baking dish with nonstick spray then set aside.
  2. Add butter to a very large microwave-safe bowl then microwave for 30 seconds or until melted.
  3. Add marshmallows then stir to coat and microwave for 1 – 1-1/2 minutes.
  4. Stir until marshmallows are smooth then immediately add Chex cereal and freeze-dried strawberries.
  5. Mix until evenly coated then scoop into prepared baking dish and press into an even layer.
  6. Cool, cut into bars, and serve!
