Spicy Tomato Soup with Cheese Tortellini

What better says comfort food on a cold winter day than tomato soup and a grilled cheese sandwich?  However for my entire life, I have never thought I liked tomato soup.  I always associated it with the canned kind that in my opinion has poor tomato flavor and texture.  Since making my it homemade, I find that the rich tomato flavor with a spicy kick is so good!  And if you want to take it up another notch, skip the regular grilled cheese sandwich and go with a grilled pimento cheese sandwich.

Adding the cheese tortellini made this soup even extra delicious.  It gave another texture and flavor to an already great soup.  You can certainly leave it out if you choose to.  If you do add it, just use a good quality tortellini and freshly grated Parmesan cheese.  Adding quality ingredients will make all the difference in the finished product!

Quiche & Tomato Soup 092Ingredients:

  • 1 large onion, finely chopped
  • 4 tablespoons butter
  • 28 ounce can of crushed tomatoes
  • 8 ounce can tomato sauce
  • 3 cups chicken broth
  • 1 1/2 tablespoons dry basil
  • 1 + teaspoons salt
  • 2 + tablespoons sugar
  • 1/2 teaspoon cayenne pepper (may omit or add more to your taste)
  • Black pepper to taste
  • 1 cup dry cheese filled tortellini (I like Barilla brand)
  • Freshly shredded Parmesan cheese



In a large saucepan, saute onion in butter until tender.

Add the tomatoes,  tomato sauce, broth, basil, sugar, salt, pepper., cayenne.

Bring to a boil, then reduce heat; cover and simmer for 30 minutes. Cool slightly.

Cook tortellini according to package directions; drain well and set aside.

In a blender or food processor, process soup in batches until smooth.

Return to the saucepan; add tortellini and heat through.

Garnish with cheese.
