Spicy Queso

I just got back from a fantastic week of visiting family in Missouri.  My sister has always been an amazing cook, trying lots of new recipes.  Well to my surprise last Sunday night, her husband made his version of his favorite restaurant queso.  I say surprise because I really don’t know of him ever cooking anything before!  It was super good!  He used a new Velveeta white queso cheese as the base.  I’d never looked for that in the grocery store before, but I found it right next to the regular Velveeta cheese.  The amount of green onion and cilantro can be adjusted to taste.  If you like things even spicier, add a little cayenne. This recipe is super quick, easy and a great snack!

 

Spicy Queso

Ingredients:

  • 1 pound white queso Velveeta
  • 2 cans Rotel tomatoes, drained
  • 1/4 cup sliced green onion
  • 1/4-1/2  teaspoon cumin
  • 1 teaspoon garlic,  minced

 

Directions:
Melt all the above ingredients until smooth.
Add a little milk if needed to thin.
Add 1/4 cup chopped cilantro.
Serve warm with tortilla chips.

    I just commented on your white queso made with American cheese that I prefer American to Velveeta, and here you have presented another alternative – I’ll have to see if our stores have white queso Velveeta, because this looks delicious too!
