Sawdust Pie

Ever heard of Sawdust Pie? I hadn’t until visiting western Kentucky several weeks ago. During a dinner that I attended, I was offered several desserts, but was interested to know what this pie was like. Evidently, it is one of the specialties at a popular restaurant called “Patti’s” in that area. It was so good that I had to figure out a recipe to replicate at home.

This pie is super fast and easy to make. Putting bananas under the layer of whipped cream is optional, but I definitely recommend doing it. Save a few crumbs from your graham crackers to sprinkle over the top to make it look  pretty!

  • 1 1/2 cup sugar
  • 1 1/2 cup coconut, flaked
  • 1 1/2 cup graham cracker crumbs
  • 1 1/2 cup pecans, coarsely chopped
  • egg whites, unbeaten
  • 9 inch unbaked pie shell
  • Whipped cream
  • Sliced bananas
In large bowl combine first five ingredients.
Mix well by hand.
Pour into unbaked pie shell.
Bake in preheated 325° oven for 25 to 30 minutes….Do not over bake. Center should be gooey.
Serve topped with sliced bananas & whipped cream.
