Russian Teacakes aka Mexican Wedding Cookies

When I think of Russian Teacakes, I think of my childhood.  This was another one of those recipes that my mother made every Christmas.  It has become a staple Christmas goodie at my sister’s house as well.  The little cookie balls will melt in your mouth.  They are sweet, but not too sweet.  You can make them ahead and freeze, too.  They are a definitely a holiday favorite!

  • 1 cup butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla
  • 2 1/4 cups flour
  • 1/4 teaspoon salt
  • 3/4 cup pecans, finely chopped

Preheat oven to 400°F.

Thoroughly mix butter, sugar, and vanilla.

Work in flour, salt, and nuts.

Shape dough into 1 inch balls.

Place on ungreased baking sheet.

Bake 10-12 minutes or until set, but not brown.

While warm, roll in powdered sugar.

Roll in sugar again.

Makes about 4 dozen.

Kim, this is a Christmas memory for me too. My grandma would make them and put a tin under the tree for me and one for my sister.
