I love all kinds of pasta salads, but this has to be an absolute favorite of mine and of both my girls! Rose is my mother in-law who gave me this recipe. It is a little sweet, a little tangy, very creamy and just really good! I usually think of a pasta salad in the summer time, but it makes a great side dish with hamburgers, sandwiches, or as a stand alone lunch.
If you are eating this immediately, just put on the amount of dressing that seems right to you. All of it at one time will seem very soupy. The pasta really absorbs the dressing when it has been sitting for awhile, so if you put all the dressing on and then plan to serve it the following day, the dressing amount will be just right.
- 3-1/2 cups cooked macaroni
- 1 cup shredded Velveeta cheese
- 3/4 cup sweet pickles
- 8 hard-boiled eggs, chopped
- 1 tablespoon onion flakes
- 1- 1/4 cup salad dressing (Miracle Whip)
- 1-1/4 cups sugar
- 1/4 cup milk
- 1 teaspoon white vinegar
Combine all ingredients and chill.
