Roasted Ranch Potatoes with Bacon & Cheese

While perusing Pinterest awhile back, I ran across a recipe similar to this one that looked so good, I knew I’d have to try it.  Well, I’m happy to say I finally made it and it was a hit!  I mean think about it, is there any more delicious combination of flavors than potatoes, bacon, and cheese?  I think not!  Then, give it a flavor of ranch dressing and you’ve put it over the top!

These potatoes make a great side dish with most anything.  Think of a great loaded baked potato flavor with the extra zing of ranch dressing and then potatoes that are slightly crispy and roasted as opposed to fluffy and baked.  To serve, a spoon of sour cream would be great, but I ate mine with a little extra ranch dressing on the side to dip.  It was so good!

  • 2 pounds potatoes (unpeeled, washed and cut into chunks)
  • 1/2 cup ranch dressing (bottled, not packet)
  • 1/2-3/4 cups shredded cheddar cheese
  • 1/2 cup crumbled, cooked bacon or real bacon bits
  • 3 green onions, washed and finely chopped
  • Salt
  • Pepper
  • Non-stick cooking spray



Preheat oven to 350 °F.

In a large bowl, combine the ranch dressing with the potatoes.

Sprinkle in a generous pinch of salt and pepper.

Spoon into a greased 9 x 13 baking dish.

Cover with foil.

Bake for 60 minutes, stirring gently halfway through to get the bottom potatoes for even browning.

Remove foil.

Raise oven temperature to 400°F , gently stirring again, as necessary.

Bake for an additional 15 minutes, then sprinkle on cheese and bacon.

Bake a few more minutes or until everything is gooey, browned and bubbly on top.

Serve with green onions sprinkled on top for garnish.

Great with a dollop of sour cream or extra ranch dressing.
