Pumpkin Spice Oatmeal Cookies

Nothing says home like homemade cookies!  Whether chocolate chip, peanut butter, sugar, oatmeal, or any other kind!  Fresh hot cookies from the oven with a cold glass of milk brings back memories of my childhood.  I love to bake cookies now for my children and their friends.  At any given time,  you will probably find either raw cookie dough or baked cookies in my freezer.  I especially like to have cookie dough ready so that fresh, hot cookies can be prepared in minutes.

This was my first time baking these cookies.  I put the white chocolate chips in since the original recipe had them, but I have listed them as optional.  I think my preference would be to leave them out.  I might even add extra cranberries.  They made these cookies really good!

Pumpkin Oatmeal 003


  • 1 cup butter, softened
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 teaspoons vanilla
  • 1 1/3 cups flour
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoons baking powder
  • 1/2 teaspoons  baking soda
  • 1/2 tsp. salt
  • 2 1/2 cups rolled oats
  • 1 1/2 cups dried cranberries
  • 1 cup white chocolate chips



Using a mixer, combine the butter, sugars, eggs, and vanilla

Add in all other ingredients.

Drop by spoonfuls onto cookie sheet.

Bake at 375 °F for approximately 12 minutes.
