Pizza Cups

I don’t believe that there is any type of food that includes pizza in the title, has lots of pepperoni, and lots of cheese, that won’t make my family very happy!  These little pizza cups are no exception.  In my last post on S’mores Bars, I mentioned the youth devotional that we had last night after church for our middle and high school kids.  I usually try to bring something sweet and something a little more substantial, since most families haven’t had dinner before they come.  I took about 50 little pizza cups with me, and the pan was empty by the time I went through the line!

My sister makes a delicious little wonton/sausage/pepper appetizer every Christmas time for a holiday appetizer.  I wanted to try a different variation of it last night, so this is what I came up with.  My directions are the way I made it, but it really doesn’t matter how you put the insides together.  You could layer the sauce, pepperoni, and cheese just as well as mixing it all up like I did.  It would be good either way.  You could also freeze them.  I would just do the first baking, fill, and then flash freeze (freeze individually on a cookie sheet before putting in baggies).  You could also fill them with any other toppings that you like on your pizza.  Next time, I think I’ll try sausage, green olives, and peppers, (my personal favorites)!

Ingredients:

  • 2 cups pepperoni, chopped
  • 2 cups mozzarella cheese, shredded
  • 1 cup spaghetti or pizza sauce
  • 1 package wonton wrappers

 

Directions:

Preheat oven to 350 °F

Press the wonton wrappers into the bottom of a mini-muffin tin.

Bake for 7 minutes until the cups are firm.

In medium size bowl, combine sauce, pepperoni, and cheese.

Fill each wonton wrapper with a spoon of the pepperoni mixture, filling each up to the top.

Sprinkle with a little extra cheese.

Bake again at 350°F for another 7 minutes or until wontons are golden brown and cheese is melted.

Fill with 1 teaspoon of marinara sauce, then fill with your pizza toppings. Top with a generous pinch of shredded cheese, and a sprinkle of Italian seasonings. Repeat with remaining pizza cups. Then bake for an additional 7-10 minutes, or until cheese is melted. Serve immediately.
