Pistachio Cranberry Bark

There are lots of recipes for chocolate bark that are easy and delicious.  I especially like this combination because you get a yummy sweet and salty treat that looks great for Christmas.  The green pistachios and red dried cranberries make the perfect candy for your dessert plate. As always, just be sure to use a high quality chocolate that tastes great on its own.

This recipe is very quick and easy to throw together, but tastes and looks like it was more difficult than it really was.   No one has to know how little time it takes to make.  Wouldn’t it look great to stack pieces in a clear cellophane goodie bag with a beautiful ribbon tied around the top?  Hmmm…..  Excuse me.  Gotta go.  I have something I need to do! 😉

Ingredients:

  • 16 ounces good white chocolate
  • 4 ounces (approximately) milk or dark chocolate
  • 1/2 cup whole shelled salted pistachios
  • 1/4 cup dried cranberries
Directions:
Place white chocolate in a heat-proof glass bowl and microwave for 1 minute.
Stir and continue to heat in microwave at 15 second intervals until fully melted.  (Do not over cook).
Pour melted white chocolate  onto a parchment lined cookie sheet.
In another heat-proof glass bowl, heat milk or dark chocolate the same way until melted well.
Drizzle melted darker chocolate on white chocolate.
Sprinkle pistachios and cranberries on top of the chocolate, gently pressing down.
When chocolate has hardened, gently break into pieces.
Freezes well.
