When I start to plan holiday baking and candy making, I always ask each member of my family to give me their number one favorite sweet for me to make. I can ALWAYS count on Kelli to pick Peppermint Patties. Because I make so many goodies through the holidays, I usually make a plate of everything for immediate consumption and then freeze the rest. Then as I have holiday parties or company, I can quickly make a goody plate. While the peppermint patties are good at room temperature, I think Kelli’s favorite way to eat them is straight from the freezer!
Peppermint Patties
Ingredients:
- 3/4 cup sweetened condensed milk
- 1 1/2 teaspoons peppermint extract
- 4 to 4 1/2 cups powdered sugar
- 18 ounces of semi-sweet chocolate
- 2 teaspoons vegetable shortening
Directions:
In a bowl, combine condensed milk and peppermint extract.
Add 3 1/2 to 4 cups of the powdered sugar and blend until stiff.
Turn mixture out onto a work surface and knead in enough of the remaining powdered sugar to make the mixture stiff. It will no longer be sticky.
Pinch off 1-inch pieces of the mixture and roll into balls.
Place balls on a sheet of wax paper.
At this point, you can leave in a ball shape or flatten into patty.
Let them dry for 1 hour and then turn over to dry 1 more hour.
Melt chocolate and shortening in a heavy saucepan, stirring frequently over very low heat.
Remove from the heat.
Dip patties into chocolate and place on wax paper. Let the chocolate dry.
