What party is complete without a cheese ball? With upcoming Super-bowl parties, a cheese ball is great to make since it is quick, easy, just a few ingredients, and can be made ahead of time!
Of course there are literally hundreds of cheese ball recipes out there. I have made various ones through the years, but this is one of my favorites. The cream cheese gives this great texture so it cuts and spreads on crackers easily. You don’t really notice a pineapple flavor, but rather when combined with other ingredients, it has a slightly sweet and savory flavor. The green pepper and green onion offset the sweetness for a great balance.
This year, I made one recipe of this cheese ball and formed into 2 balls. One of them I used for a small party at my house and the other was used on my Christmas Eve “Appetizer Buffet” that we traditionally do. With all the ridiculous amount of cooking that I did for Christmas Eve and for Christmas Day, it was great to have this delicious cheese ball ready to go ahead of time!
- 2 packages (8 ounces each) cream cheese, softened
- 1 can (8 ounces) crushed pineapple, drained
- 1/4 cup finely chopped green bell pepper, or mixture of green and red bell pepper
- 3 tablespoons finely chopped green onion
- 2 teaspoons seasoned salt, or to taste
- 2 cups chopped pecans, divided
Combine cream cheese, drained crushed pineapple, chopped bell pepper, chopped green onion, seasoned salt, and 1 cup chopped pecans.
Chill in refrigerator until firm then shape into a ball.
Just before serving roll in remaining cup of pecans.
Serve cheese ball with assorted crackers.
Makes about 3 cups of cheese spread which is 1 very large or 2 smaller balls.
