So recently on the same night that I made Homemade Enchiladas and Pico de Gallo, I also made Guacamole. A Mexican fiesta, (OK, it was just a Tuesday night with the family), isn’t complete without a great guacamole. To tell you the truth, I’ve never been much of a fan of guacamole served with my food at my favorite Mexican restaurant. It’s just kind of bland. Nothing special about it. So when I found this recipe on a blog recently (sorry I can’t remember which one), I decided to take the plunge and buy my first avocado! No looking back now. This stuff is great and somewhat addicting (remember the 15 year old? I didn’t make enough and didn’t get any leftovers Grr…). Anyway, something I still want to try was an idea from the blog twopeasandtheirpod which was to make guacamole grilled cheese sandwiches. That would be a whole new taste sensation to the ordinary grilled cheese! Can’t wait to try those. I just need to make enough guacamole or hide it better from “the boy!”
Guacamole

Ingredients:
- 4 large ripe avocados, seeded
- 1 t ground cumin
- 2 tomatoes, seeded and diced
- 2 cloves garlic, minced
- 1 tablespoon diced jalapeno
- 3 tablespoons diced red onion
- 1/4-1/3 cup chopped cilantro
- 3 T fresh lime juice
- Salt to taste
Directions:
Peel & dice the flesh of the seeded avocados and place in a large bowl.
Add the remaining ingredients and blend.
Taste to adjust seasonings.
Serve with corn tortilla chips.
