Egg Salad

Eggs….what’s not to love?  They are a super nutritious, easy to prepare, inexpensive, and you can prepare them a dozen delicious ways!

I don’t remember ever eating egg salad when I was growing up.  It wasn’t until just a few years ago that I tried it and knew I needed to work on a recipe that my family would love.  This one pretty much nailed it.  We eat it with crackers or on a sandwich, (toasted bread is especially good, too)!

This recipe is certainly nothing fancy or complicated, but if you love eggs (or are a low carb person making some minor adaptations), this recipe is worth a try!

Zucchini & Egg Salad 010Ingredients:

  • 12 eggs, hard boiled, chopped
  • 3/4 cup mayonnaise
  • 2 teaspoons yellow mustard
  • 1/4 cup sweet pickles, chopped
  • 1 tablespoon dry onion flakes
  • 1/3 cup celery, finely chopped

Directions:

Mix all ingredients together, stirring gently.
