At the beginning of the month we decided to pay a visit to a local pick-it-yourself farm, in search of blackberries and peaches, but when we got there we found out that due to unseasonably warm weather, we were too late. All the crops had come in about a month earlier than expected and apples were the only crop left. Not to leave empty handed, we loaded up on a variety of apples and started thinking of ways to utilize them.
Apples may not be the star of this chicken salad, but they definitely play their role and there is something so nice about creating recipes with fruit you actually picked yourself!
This chicken salad has a little kick of spice that I loved. Serve it nice and cool on your favorite bread, or on a bed of lettuce.
Curried Chicken Salad
- 2 cooked chicken breasts, chopped
- 1 red apple, diced
- 1/2 cup toasted pecans, chopped
- 1/2 cup raisins
- 1/2 cup mayonnaise (to start)
- 1 teaspoon sugar
- 1/2 teaspoon curry powder
- 1/4 teaspoon cayenne pepper
- Salt and pepper, to taste
Add all ingredients into a bowl and stir to combine. Add more mayonnaise to taste.
