This salad is the result of “It’s Tuesday afternoon, I have about an hour to eat between classes, and I’m starving: what can I throw together that is fast?” There was couscous in the pantry, spinach in the fridge, and a black hole in my stomach.
This came together quickly while still tasting like a real meal (as opposed to eating a sleeve of saltine crackers, my other option, which I will call a fake meal). I am very satisfied with the result.
Couscous Salad with Honey Nutmeg Dressing
- 3/4 cup couscous
- 1/4 cup plain yogurt
- 1 teaspoon honey
- 1/2 teaspoon nutmeg
- Fresh spinach (optional)
- 1/2 nectarine, chopped
- 1/8 cup canned beets, chopped
- 1 tablespoon walnuts, chopped
- Honey goat cheese, crumbled
Cook couscous according to package directions.
Meanwhile, in a small bowl whisk together the yogurt, honey, and nutmeg. Set aside.
Make a bed of fresh spinach for the salad, topping with warm couscous, nectarine, beets, walnuts, and goat cheese. Apply yogurt dressing as needed and enjoy.
