Cookies & Cream Bars

Rice Krispie treats have been around nearly as long as I have!  They have been SO popular through the years, that you don’t even have to make them anymore.  They come now as pre-packaged snacks. (Though homemade ones still taste way better!)

Just this past week, I came across this recipe and knew it would be a hit with the kids and with me.  Really yummy to eat, just three ingredients, and minutes to make.  They’re perfect for warmer weather, because they are no bake!   This weekend our kids had friends over and it was the perfect quick cookie bar to serve them.  This recipe will certainly be a repeat in our household!

 Cookies & Cream Bars

  • 1 (16-ounce) package of Oreo cookies, crushed
  • 5 cups mini marshmallows
  • 4 tablespoons butter

Place Oreos in food processor and pulse until ground.

Melt marshmallows and butter in microwave until puffed, about 1-1/2 to 2 minutes.

Remove and pour in ground Oreo Cookies.

Stir to combine then transfer to a 8×8 inch baking pan that has been sprayed with cooking spray.

Let set up for 10 minutes.

Remove bars out of pan and cut into squares.

(I especially LOVED them when chilled)!
