For Valentine’s Day this year I felt like making something with cherries. Specifically, this cherry truffle recipe. But not paying enough attention at the grocery store, I ended up buying a can of unsweetened stemless cherries like these:
…instead of the sweet cherry-on-top maraschinos that the recipe called for. Eventually I got what I needed but that left me with a can of cherries I really didn’t know what to do with. Until this morning.
This smoothie definitely feels like eating dessert. I love it. But that being said, it is not terribly sweet as written. You could easily replace the plain yogurt with vanilla for added sweetness, but for me, adding the banana and just a bit of honey transformed this enough so that on it’s own it was fruity but still tart enough to be in excellent contrast with its chocolate crumble dusting.
Cherry Oat Smoothie
- ¼ cup oats
- ¼ cup water
- 1 can cherries, liquid reserved
- 1 banana, frozen and chopped
- ½ cup plain yogurt
- ½ teaspoon vanilla extract
- ¼ teaspoon nutmeg
- 1 teaspoon honey (or more to taste)
- Chocolate shavings, for garnish
Soak the oats in water for about 30 minutes and then drain any excess fluid.
Add 1 cup cherries and 2/3 cup of their juice to a blender. Next add banana, yogurt, vanilla, nutmeg, and oats. Blend until smooth.
Add honey to taste.
Garnish with chocolate shavings and enjoy!
