Cheeseburger Mac

 
Do your kids like that processed, packaged stuff that claims to “help your hamburger” and “make a great meal?”  Well, my younger kids do.  Through the years I have bought that and made it for dinner on nights when I was just cooking for them because I don’t care much for it and my husband doesn’t like it at all.  It’s quick, easy, and they like it.  Well, I now have a quick, easy, and SO much better tasting version!

This recipe can be adjusted to your taste on spiciness.  If you want no spice, just use petite diced tomatoes instead of Rotel and leave out the taco seasoning.  The first time I made it, I thought it was a little too spicy, so for us, I have cut down on the taco seasoning.  Adjust to your taste.

Don’t let the list of ingredients scare you.  This meal is still ready in around 20 minutes or so.  It goes even faster if you have pre-cooked packages of hamburger meat in the freezer.  Just like I cook chicken in large batches and freeze the chopped pieces, I also like to cook extra hamburger meat to bag and take out for a quick add-in to soups, spaghetti, casseroles, etc.

 

 

Cheeseburger Mac

Yield: 4 Servings

Ingredients:

For the hamburger pasta:

  • 1 pound hamburger meat
  • 1/2-1 package taco seasoning
  • 1 can Rotel tomatoes and green chilies (or petite diced tomatoes)
  • 2 cups beef broth
  • 1 cup elbow macaroni
  • Cheese sauce (see recipe below)

For the cheese sauce:

  • 2 tablespoons butter
  • 2 tablespoons flour
  • 3/4 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

 

Directions:

For the hamburger pasta:

Brown and drain hamburger meat. Stir in taco seasoning, Rotel, beef broth, and macaroni.

Heat to boiling, then reduce heat and cover pan.

Simmer 12-14 minutes until macaroni is tender.

 

For the cheese sauce:

Melt the butter in a saucepan. Whisk in the flour and cook, whisking for 5 minutes. Whisk in the milk and bring to a boil. Whisk until smooth and thickened.

Remove from heat and stir in the shredded cheddar cheese until melted. Add the salt and pepper to the cheese sauce.

Pour the cheese sauce over the hamburger mixture.

Stir gently to combine.
