A lady from church recently gave me the idea to try these protein packed gluten-free carroty snacks. They only require a bit of chopping and throwing ingredients into a blender, so this is a pretty simple and healthy snack to assemble.
Some other places have been calling these “carrot cake bites” and I can see a sort of resemblance, though I see them more as an in-between meals snack food than a dessert. Just so long as you’re not expecting cake, they’re quite good!
- 2 large carrots, peeled and roughly chopped
- 1 cup of walnuts
- 1/4 cup raisins (or dates!)
- 2 tablespoons raw oats
- 1/2 teaspoon grated ginger
- 1/2 teaspoon cinnamon
- Zest from one orange
- Coconut, oats, or chopped nuts for rolling in (optional)
Using a food processor, pulse the carrots until finely ground. Add walnuts and process. Add the raisins and process until finely chopped and incorporated with the nuts.
Add the remaining ingredients and process until a rough dough forms. If it seems a little dry, add a few drops of water and process again.
Shape into small balls. If you’d like you can roll these in a coating of chopped nuts, shredded coconut, or oats.
Store in the fridge until ready to eat.
