Butter Pecan Bars

Let’s see…. What adjectives would describe these cookie bars?  The top three that I think of are rich, delicious, and easy.  Cookie bars are much less time consuming to make than regular cookies.  I first ate these Butter Pecan Bars a number of years ago at a friend’s house.  I thought they were so good, but SO rich.  You should probably cut them into smaller pieces than I have shown here.  With all that cream cheese, butter, and sugar, they are not exactly low calorie!

Ingredients:

  • 1 package of butter pecan cake mix
  • 2 sticks of butter or margarine, melted
  • 1 package cream cheese softened
  • 1 pound powdered sugar
  • 3 eggs
  • 1/2 cup pecans

 

Directions:

Mix 1 stick butter, 1 egg, and cake mix.

Pat dough into 9×13 dish.

Mix sugar, 1 stick butter, 2 eggs, and cream cheese.

Pour over cake mixture.

Top with pecans.

Bake 55 minutes at 300 °F.

Sprinkle top with powdered sugar.

    Wow! I have a recipe called “Thing Cake” it’s the same, except no pecans and uses a yellow cake mix. It’s a favorite of mine! I just bought a butter pecan cake mix tonight and was looking for some interesting way to use it…ding! ding! ding! Jackpot! I can’t wait to try this new twist!
