Cheesy Sausage & Potato Breakfast Casserole

Myfamily are not regular breakfast eaters.  Mornings are usually busy, trying to scramble to get to school and to work on time.  At best, my kids may ask for a bagel with cream cheese.  However, everyone likes the typical breakfast foods:  eggs, sausage, potatoes.  This recipe has all those things mixed into one delicious casserole and has become a favorite of my children, though I have probably made it more for a dinner meal than for breakfast.

This casserole can easily be mixed up early in the day and baked at the last minute if serving for supper.  For Christmas morning last year, I mixed it all up on Christmas Eve and baked it while we opened gifts.  So good!


  • 1 pound mild pork sausage, cooked & drained
  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 12 eggs
  • 1 cup milk
  • 1 package (16 ounces) frozen hash brown potatoes, thawed
  • 1-1/2 cups shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon pepper



In a skillet, cook sausage until no pink remains.

Remove with a slotted spoon; remove and set aside.

Beat eggs and milk in a large bowl.

Stir in hash browns, cheese, salt, pepper, onion, green pepper, and sausage.

Transfer to a greased 9×13 baking dish.

Bake uncovered at 350  for 35-45 minutes or until a knife inserted near the center comes out clean.

Yield:  6-8 servings.


*Bacon may be substituted for the sausage.
