Boston Brown Bread

It is always fun to make little loaves of bread to give away at Christmas time or as a little hostess gift.  But what makes this recipe extra fun is that those little loaves of bread are baked right in the can!  You know, the type of can that vegetables come in.  With this particular recipe, I got 8 mini loaves.  Just be sure to grease the cans really well.  I gave each can a good coating with the cooking spray made especially for baking.  The bread slid out very easily after letting it cool just a bit.

This bread can be made with raisins or prunes.  You can use pecans, walnuts, or any other nut.  While butter on hot bread is always good, this bread is especially good served with cream cheese.  Perfect for breakfast or delicious snack!

Christmas Baking 052 Ingredients:

  • 1 (1 pound) box raisins or 3 cups chopped prunes
  • 3 teaspoons baking soda
  • 3 tablespoon butter
  • 1 teaspoon salt
  • 2 cups boiling water
  • 2 eggs, beaten
  • 2 cups sugar
  • 4 cups flour
  • 1 package walnuts or pecans

Directions:

Pour boiling water over the first four ingredients.

Add the eggs, sugar, flour, and nuts.

Grease 6 cans (16 ounce vegetable cans)

Fill cans 1/2 full.

Bake at 350 degrees for 1 hour.

(Delicious with cream cheese spread on it).
