For lunch today, I wanted to imitate the cute cucumber BLT wrap I saw on this site. Essentially, bacon, lettuce, and tomato, sans bread. (Who needs the bread? Because really, we all know the bread just gets in the way of the good stuff anyway.)
But when I went to grab that green leafy spherical vegetable out of the back of the fridge today I suddenly realized it was NOT lettuce; all I had was cabbage in disguise. But why not? It’s green, leafy, and not a very far stretch from lettuce. Plus I love cabbage, so it was a natural choice. I will say, however, that even if you don’t love cabbage, I feel like bacon can fool a person into accepting absolutely anything it is paired with. Lettuce is good. Cabbage is better. Give it a try and see what I mean. Next time I make this, I will probably use cabbage intentionally.
Bacon (Cabbage?) Tomato Wrap
Yield: 2 wraps
- 4 leaves cabbage
- 1 roma tomato, diced
- ¼ cup cucumber, diced
- 2 tablespoons ranch salad dressing
- 2 slices turkey bacon, crumbled
Mix the cucumber, tomato, and ranch dressing in a small bowl.
Arrange two cabbage leaves as a bowl and spoon half of the mixture inside. Top with 1 strip of bacon, crumbled.
Form into a wrap and enjoy.
