April Fool’s Day Fun

My husband loves April Fool’s Day pranks, so this year I got one up on him!  He’s been doing great with cutting down on the sweets, so when he got home this evening and saw this cake, he got a little excited.  If you can’t tell my prank from the picture, the cake isn’t a cake at all.  It is a 2 layered meatloaf in place of the cake with icing made from mashed potatoes.  The decoration on top is just green peas with a dot of ketchup for color!

I made my usual meatloaf recipe that is found here: Brown Sugar Glazed Meatloaf.

Make meatloaf in 2 round cake pans.

Bake at 375 degrees for 1 hour & 15 minutes or until cooked through.

Top with mashed potatoes.

Decorate by making flowers with 3 green peas.

Make brown sugar glaze from meatloaf recipe.  Put dots in the middle of the peas and use the rest to serve with dinner.

    What a Great Great Idea. Can you prepare this recipe and than put back in oven at 350 for 30 minutes to heat the meal back up to dinner temp.

      I’ve not done that. If I were making it like in the morning to serve for dinner, I’d probably have the meatloaf ready to bake & the potatoes peeled and ready to cook, then finish it all up before serving. I’m afraid it might not heat all the way through or get dried out doing it all in advance. If you try it, let me know what happens.
