Apple Cream Cheese Bundt Cake


When I was a child, I remember my mom getting a Bundt pan. They were quite popular then, especially when Pillsbury started a line of Bundt cake mixes.  Well thanks to this recipe from Southern Living, it is time to dust off those old pans and get to baking! This ultra moist, apple spice, cream cheese filled, praline frosted beauty will make  your family or guests very happy!



Cream Cheese Filling:

  • 1 8 ounce package cream cheese softened
  • 1/4 cup butter softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 2 tablespoons all purpose flour
  • 1 teaspoon vanilla

Apple Cake Batter:

  • 1 cup finely chopped pecans (optional)
  • 3 cups all purpose flour
  • 1 cup granulated sugar
  • 1 cup firmly packed brown sugar
  • 2 tsp ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground allspice
  • 3 large eggs lightly beaten
  • 3/4 cup canola or vegetable oil
  • 3/4 cup applesauce
  • 1 teaspoon vanilla
  • 3 cups peeled and finely chopped apples (I used Gala)

Praline Frosting:

  • 1/2 cup firmly packed brown sugar
  • 1/4 cup butter
  • 3 tablespoons milk
  • 1 teaspoon vanilla
  • 1 cup powdered sugar


Preheat oven to 350.

Make filling by beating first three ingredients in mixer at medium speed.

Add egg, flour and vanilla, beating until blended. Then set aside in separate bowl while you make batter.

Toast pecans in oven for eight to ten minutes.

In a large bowl, mix together three cups flour and next seven ingredients.

Stir in eggs and next three ingredients, mixing just until incorporated.

Add apples and pecans.

Spoon two thirds of the batter into buttered and floured Bundt pan.

Spoon cream cheese mixture into the center of the batter. Use a knife to swirl the cream cheese mixture into the apple batter. Pour remaining batter on top.

Bake for 1 hour or 1 hour and 15 minutes. Remove from oven and set on cooling rack for 15 minutes.

Let cool for two hours.

For frosting; bring brown sugar, butter and milk to a boil whisking constantly.

Boil for one minute.

Remove from heat and stir in vanilla.

Whisk in powdered sugar.

Stir gently for 3-5 minutes or until mixture begins to cool slightly.

Pour over cake.
