It’s President’s Day and what better time to share a delicious cookie recipe. Maybe Mitt Romney didn’t win the last presidential election, but his wife’s cookie recipe is definitely a winner. As I took a big plate of these to a group of preaching students, I told them that today’s cookies have peanut butter, oatmeal, chocolate chips, & M & M’s. One of guys said, “You got all that in one cookie”? Yes sir, I did. Thank you Mrs. Romney!
- 1 cup white sugar
- 1 cup packed light brown sugar
- 1/2 cup butter, softened
- 1 1/2 cups crunchy peanut butter
- 1 tablespoon light corn syrup
- 3 eggs
- 1/2 teaspoon vanilla
- 4 1/2 cups old-fashioned rolled oats
- 2 teaspoons baking soda
- 1 cup mini chocolate chips
- 2/3 cup mini M&M candies
Heat oven to 350°.
In a large bowl, cream sugars, butter, peanut butter and corn syrup on high speed until well combined.
Beat in eggs 1 at a time.
Add vanilla extract.
Add oats and baking soda, mixing well.
Mix in chocolate chips and M&M’s.
Using a standard-size ice cream scoop, drop dough onto baking sheets (leave plenty of room for spreading).
Bake for 12-15 minutes just until they start to brown. (It depends on the size you are making. Mine were 15 minutes)
Cool 2 minutes, then transfer cookies to a wire rack to cool completely.
